Potatoes often get a bad rap, but it could be more about how they are prepared (fried, mashed with milk and butter). In reality, this hardy tuber is rich in potassium and a good source of fiber. The skins are also a source of antioxidants that help protect the heart and may have anti-cancer benefits. Here is a fool-proof recipe for the best crispy baked potato:
πŸ₯” preheat oven to 300 degrees
πŸ₯” scrub potato and pierce skin a few times with a fork
πŸ₯” Coat the potato with olive oil and salt and place on a baking sheet
πŸ₯” cook for 60 minutes or until outer shell is crispy but inside is soft
πŸ₯” allow to cool for 5 minutes, then slice and serve with herbs and toppings of your choice
